Properly cleaned lines play a major role in serving good tasting beverages. This is especially true when serving active beverages such as beer. In order to assure that the quality product in the keg is delivered properly to the customer, cleaning procedures and quality must be taken seriously. One easy way to ensure continually clean lines is to rotate chemicals on a regular basis. The concept of chemical rotation is not new. It is standard in many operations. This is due to the simple phenomena that no cleaner can possibly remove 100% of build-up in a beer line. However, most operations usually only rotate between alkaline and acid based cleaners on a monthly or bi-monthly rotation. In many cases this may not be enough. Rotation between two different alkaline based line cleaners as well as acid based cleaners will help to remove additional build up by using differently formulated cleaning packages and hydroxide sources.
